Chicken Quesallidas

An easy Mexican recipe mostly loved by kids.

Ingredients:

  • 1 cup chicken cooked and sliced
  • 2 tortillas
  • 1/4 cup grated mozzarella cheese
  • 1/4 shredded cheddar cheese
  • 1/3 finely sliced onions
  • 1/4 chopped tomatoes
  • 1/4 cup diced (small) bell pepper
  • 1/4 cup chopped mushrooms
  • 1 green chili
  • 1 tablespoon olive oil

Method:

  • In a fry pan add 1/2 tablespoon oil and place tortilla.
  • Sprinkle half the cheese on the tortilla.
  • Spread the veggies and chicken.
  • Again spread the rest of cheese and cover with the second tortilla.
  • Flip the tortilla and add rest of the oil to make it golden brown from the other side.
  • Turn off the flame.
  • Cut into pieces and serve with your kid’s favorite dip.

Barbecue Chicken Pita Pizza

Ingredients:

  • 1 cup cooked chicken chopped
  • 1/2 cup barbecue sauce
  • 1/4 cup chopped spinach
  • 1/4 cup chopped onions
  • 1/4 cup chopped mushrooms
  • 1/4 cup julienned capsicum
  • 1/4 cup diced tomato
  • 1 pita pizza         
  • 1/2 cup mozzarella cheese

Method:

  • Toss the chicken in half of your barbecue sauce in a fry pan for 3 minutes and let it become warm.
  • Put the pita bread on a baking sheet and spread rest of the sauce on it.
  • Top it with spinach, onions, mushrooms, capsicum, tomato and cheese.
  • Bake you healthy pita pizza in a pre heated oven at 350ºF for 12 minutes.
  • Cut into wedges and serve.

Ingredients:

  • 1 pound ground turkey
  • 1can kidney beans
  • 2 cup turkey/chicken stock
  • 1 cup chopped onions
  • 5 garlic cloves minced
  • 1can stewed tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoon red chili powder
  • 1 tablespoon red chili flakes
  • 2 tablespoon cumin powder
  • 1 tablespoon oregano
  • 1 tablespoon thyme pepper
  • 2 tablespoon chipotle pepper sauce
  • 1/2 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 tablespoon black pepper powder
  • Salt to taste
  • Chopped parsley for garnish

Method:

  • In a pan heat oil and sauté onions till translucent. Add garlic and fry for 2 minutes.
  • Now add the ground turkey and cook for the next 15 minutes, till the meat looses pink color.
  • Add the spices one by one mixing continuously.
  • Pour in the tomatoes and the stock.
  • Simmer for 15 minutes.
  • Add the beans and again simmer for 15 minutes or so.
  • Garnish with chopped parsley.

Ramen Stir Fry

An easy recipe with ingredients ramen noodles every child’s favorite.

Ingredients:

  • 1 pack ramen noodles
  • 1 cup chopped onions
  • 1 egg
  • 1 tablespoon olive oil
  • 2 tablespoon garlic minced
  • 2 tablespoon minced ginger
  • 1 cup of leftover vegetables in your refrigerator or you can use fresh vegetables (carrots, beans, scallions, cabbage, broccoli, peas)
  • 1 cup leftover chicken cooked (optional)

Method:

  • Put the ramen noodles in the boiling water for 1 – 2 minutes and drain. Ensure that they don’t get too soft.
  • In a wok heat oil and add ginger and garlic. Sauté for 30 seconds.
  • Add onions and sauté for 2 minutes.
  • Now add the vegetables and chicken and cook for the next 5 minutes.
  • Break the egg into the wok and mix.
  • Empty the seasoning sachet of the noodles in the wok and mix well.
  • Now add the noodles and mix well.
  • Your stir fry noodles are ready.

Baked Chicken Nuggets

Ingredients:

  • 3 chicken breasts cut into fillets
  • 1 cup all purpose flour
  • Salt n pepper to taste
  • 2 eggs
  • 1 tablespoon milk
  • 1 cup bread crumbs

Method:

  • Add salt and pepper to the flour and mix well.
  • Prepare an egg wash by mixing milk with the eggs.
  • Dredge the chicken pieces in this order:
  • First comes the flour. Dredge the pieces in flour and shake off the excess.
  • Dip the pieces in the egg wash.
  • Now coat the pieces well with the bread crumbs by dredging them in it. Shake off the excess.
  • Cover the platter containing the nuggets with a plastic wrap and refrigerate for 30 minutes.
  • Bake the nuggets in a pre heated oven at 200ºC for 20 minutes.
  • Serve with ketchup.
