Macaroni, Cabbage and Bean Soup

A rich in protein and fiber soup, can be served as a main course dish.

Ingredients:

  • 1 cup macaroni
  • 1 tablespoon olive oil
  • 1 onion sliced thinly
  • 1/2 thinly sliced cabbage
  • 2 garlic cloves chopped
  • 1/4 tablespoon black pepper
  • 3 cans of chicken broth
  • 2 cans of kidney beans rinsed and drained
  • Salt to taste
  • Parmesan cheese for garnishing

Method:

  • Take 2 cups of water in a pan and heat it.
  • Put macaroni in the above boiling water and let it cook for 10 minutes.
  • In saucepot heat oil, add onion and sauté it till translucent.
  • Now add cabbage, garlic and pepper. Cook till the cabbage starts sagging. Stir continuously.
  • Pour the chicken broth and add the kidney beans to it.
  • Add 1 cup of water and allow the mixture to boil.
  • Garnish with grated parmesan cheese.
  • Serve hot.

Cream Cheese Chicken Broccoli Alfredo

Ingredients:

  • 4 pounds of boneless chicken breast
  • 1 tablespoon olive oil
  • 2 cups sliced mushroom
  • 2 cups of broccoli florets
  • 1 cup of sour cream
  • 4 tablespoon parmesan cheese
  • 1 pack of Italian dressing
  • 1 pack of fettuccini
  • 3 oz Cream Cheese, cubed
  • 2 teaspoon of dried basil leaves
  • Salt and pepper to taste

Method:

  • In a pan heat oil. Add chicken breast and sauté for 10 minutes.
  • Add mushroom and broccoli. Now add salt and black pepper.
  • After 10 minutes of cooking pour sour cream and cubes of cream cheese.
  • Finally add Italian dressing and dried basil leaves.
  • Take a baking dish and pour this mixture in it and add sprinkle parmesan cheese.
  • Put the baking dish in the pre heated oven (350 °F) and let the dish cook for about 30 minutes or  so.
  • In the meanwhile in a separate pan boil water and the uncooked fettuccini for 15 minutes.
  • When the fettuccini gets cooked drain them out.
  • Pour the broccoli chicken cream over the cooked fettuccini and serve hot.

Garlic Chicken

An ideal treat for garlic lovers.

Ingredients:

  • 4 tablespoon olive oil
  • 1 pound of boneless chicken breast
  • 2 green chilies cut diagonally
  • 2 teaspoon soy sauce
  • 1 teaspoon white vinegar
  • 1 medium onion thinly sliced
  • 15 finely chopped garlic
  • 200 ml. of chicken stock
  • Parsley for garnishing
  • 1 tablespoon lemon juice
  • 2 tablespoon yoghurt
  • Salt and pepper to taste

Method:

  • In a blender put 3 tablespoons olive oil, vinegar and 9 garlic cloves and blend well.
  • In a bowl take the chicken pieces and make slashes on them.
  • In the garlic paste add salt and lemon juice and pour it over the chicken pieces.
  • Seal the bowl and refrigerate for 1 hour.
  • Shallow fry the chicken pieces. You can deep fry the pieces too or can roast them too in the oven.
  • You can eat this roasted chicken too. It not only has a flavor of garlic but will also give you the feel of mughlai taste too.
  • Now in a wok heat oil and add the rest of garlic chopped.
  • Add onion and sauté till translucent. Now add the green chilies and the chicken pieces and cook for 10 minutes.
  • Add salt, soy sauce and pepper according to your taste.
  • Now pour the chicken broth and simmer for 5 minutes.
  • Remove the chicken pieces and let the broth reduce to its half and then add the yoghurt.
  • You can serve the chicken pieces and the sauce separately or can combine them.
  • Serve hot.

Tuna Melts

Tuna melt sandwich is a yummy dish which you can make with your favorite roll, bread and cheese.

Ingredients:

  • 2 cans of tuna
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste
  • 1 scallion chopped
  • Cheese slices
  • 1 small tomato sliced finely
  • Bread or a roll

Method:

  • Drain the tuna from the can and put in a bowl.
  • Add mayonnaise, chopped scallions, salt and pepper and mix well.
  • Pre heat the oven at 350 °F.
  • Now take the bread and spread the tuna mixture on it. Layer the slices of tomato.
  • Finally cover the bread with cheese slices and put them in the bread baking dish.
  • Bake the sandwich for 10 minutes and allow it cool for 5 minutes.

Eggplant Parmesan

A quite easy and cheap recipe indeed.

Ingredients:

  • 2 large eggplants
  • 10 medium sized mushrooms
  • Bread crumbs
  • 2 eggs
  • Olive oil
  • 10 peeled tomatoes
  • 4 garlic cloves chopped
  • 1/2 cup mozzarella cheese
  • 1 cup parmesan cheese
  • Kosher salt
  • Black pepper freshly ground
  • 1/2 cup flour
  • Fresh basil leaves

Method:

  • Cut the eggplants lengthwise in 1/3 inch size. Sprinkle salt on each layer and let it rest for 2 hrs so as to make it release the extra moisture.
  • In the meanwhile we can prepare the tomato sauce. All you need to do is blend the tomatoes, garlic and 2 tablespoon olive oil together and add salt to it.
  • Press the eggplant slices to remove some more moisture and keep it on a paper towel.
  • In a bowl mix bread crumbs and flour.
  • In another bowl beat the eggs.
  • Take a slice of eggplant and dip it in egg and then in the bowl of bread crumbs.
  • Deep fry the slice and put it aside. Follow the above steps with the other pieces too.
  • Pre heat the oven at 350°F.
  • In a baking tray arrange a layer of tomato sauce and then top it with eggplant slices.
  • Now pour the parmesan and mozzarella cheese over it and again make a layer of tomato sauce.
  • Topping with a layer of eggplant make a final layer with sauce and cheese.
  • Now bake it for about 30 minutes.
  • After removing from the oven let it rest for 10 minutes and then serve.
