Chicken Piccata

Quick Dinner Recipes Chickenpiccata

Ingredients:

  • 6 boneless chicken breasts cut into halves
  • 2 tablespoon oil
  • 1/2 cup flour
  • 2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 3 tablespoon butter
  • 1/2 cup white vinegar
  • 1/3 cup lemon juice
  • 1 tablespoon parsley chopped
  • 1/4 cup water
  • 1tablespoon capers

 

Method:

  • Clean and rinse the chicken breasts and sprinkle paprika and pepper on it.
  • In plate mix flour, pepper, paprika and oregano and dredge your chicken pieces in it.
  • Heat oil in a heavy bottom skillet and fry the chicken pieces until golden brown.
  • Remove from the skillet.
  • Throw in the capers and sauté for 30 seconds.
  • Add the white wine which will also deglaze your pan.
  • Pour the lemon juice and water and let it simmer for 1 minute.
  • Add the butter and bring to boil.
  • Add parsley and dip the chicken pieces in this sauce and let it get warmer.
  • Serve hot with the sauce.

Parmesan Crusted Chicken

Parmesan cheese flavor added to tasty chicken breasts.

Ingredients:

  • 2 chicken breasts boneless
  • 1/2 cup panko  
  • 1/2 cup parmesan cheese shredded
  • Salt to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon poultry seasoning
  • 2 tablespoons oil

 

Method:

  • In a bowl mix panko, parmesan cheese, salt, garlic powder, onion powder and poultry seasoning.
  • Dredge the chicken breasts in the mixture and sprinkle some more parmesan cheese over them.
  • Take a heavy bottom skillet and heat oil in it.
  • Brown the chicken pieces in it from both the sides.
  • Serve hot with a gravy or sauce.

Reuben Sandwich

Ingredients:

Method:

  • In a wok add ½ tablespoon butter and cook sauerkraut in it for 3 minutes.
  • Mix in the island dressing.
  • Spread the rest butter on the lower part of French loaf.
  • Layer the loaf with the corned beef.
  • Top it up with the sauerkraut.
  • You can arrange a layer of tomato on it.
  • Make the final layer as Swiss cheese layer and put the top portion of the loaf.
  • Cover with an aluminum foil.
  • Grill in a pre heated oven at 350°F for 10 – 15 minutes.
  • Cut into pieces before serving.

An authentic Thai dish

Ingredients:

  • 2 cups rice noodles
  • 6 prawns/shrimps deviled
  • 1 egg
  • 2 teaspoon garlic minced
  • 1 cup spring onion chopped
  • 1 cup bean sprouts
  • 1 tablespoon chili flakes
  • 1 tablespoon roasted peanuts
  • 2 tablespoon tamarind juice
  • 1 tablespoon oil

Method:

  • Soak rice noodles in water for 3 minutes.
  • In a wok heat oil and sauté garlic for a minute.
  • Add onions, sprouts and the egg. Mix well.
  • Now add the shrimps and fry until they get cooked.
  • Add the chili flakes.
  • Drain the noodles and throw them in the wok.
  • Pour the tamarind sauce and mix well.
  • Garnish with roasted peanuts.

Grilled Tilapia with Smoked Paprika and Parmesan Polenta

You will need 15 – 20 minutes for this dish. Isn’t it good…

Ingredients:

Polenta

  • 5 cups milk fat free
  • 1 cup polenta
  • 1/2 teaspoon salt
  • 1/2 cup parmesan cheese

Fish

  • 5 tilapia fillets
  • 2 tablespoon oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • Cooking spray

Method:

  • In a pan pour milk and bring to boil.
  • As the milk boils slowly add polenta. Stir continuously and check no lumps are formed.
  • When the mixture gets thick lower the flame and add salt.
  • Mix well and set aside.
  • In a bowl add oil, paprika, garlic powder, salt and Worcestershire sauce. Mix well.
  • With the help of a brush coat the fillets with the mixture.
  • Spray your grill pan with cooking spray and grill your fillets for 4 minutes on each side.
  • Serve with polenta and green salad.
