Ingredients:

  • 1 and ½ cup Greek seasoning 
  • 3 cups boiled elbow macaroni
  • 1 and ½ cup fresh sliced mushrooms
  • 1cup sun dried tomatoes
  • 1 cup diced capsicum
  • 1/2 cup chopped spring onions
  • 1 cup black olives halved
  • 1 cup feta cheese
  • 2 tablespoon lemon juice
  • 2 teaspoons Pepper powder

Method:

  • In a bowl add macaroni, mushrooms, tomatoes, capsicum and olives.
  • Now add the crumbled feta cheese and pour the lemon juice.
  • Pour the Greek seasoning and mix well.
  • Add pepper powder and toss the salad.
  • Garnish with spring onions.

  • 2 ripe avocado peeled and pitted
  • 2 cucumbers peeled and chopped
  • 1 cup yoghurt
  • 2 tablespoon lemon juice

  • 1 teaspoon pepper powder

Method:

  • Blend avocado, cucumbers, yoghurt and lemon juice in a blender.
  • Add salt and pepper.
  • Refrigerate for 30 minutes and serve cold.

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup broccoli cut into small florets and blanched.
  • 1 cup diced bell peppers (green, red, yellow)
  • 1 cup asparagus 1” pieces
  • 1 cup diced carrots.
  • 1 cup mushrooms sliced.
  • 2 garlic cloves chopped.
  • 1/2 teaspoon white pepper
  • Salt to taste
  • 1/2 teaspoon white vinegar
  • 1 tablespoon red chili flakes
  • 2 teaspoons soy sauce

Method:

  • In a wok heat olive oil.
  • Add chopped garlic and fry it for 1 minute.
  • Now add the vegetables one by one starting with broccoli and stir continuously.
  • Add salt, vinegar and soy sauce.
  • Let the vegetables cook until they become soft.
  • Sprinkle red chili flakes.
  • Serve hot. If you want you can serve over rice.

Red Chicken

Ingredients:

  • 3 boneless chicken breast
  • 3 tablespoons sweet and sour sauce
  • 1 cup white vinegar
  • 1 cup brown sugar
  • 1 pouch of onion soup mix

Method:

  • Slit the chicken.
  • In a bowl add all the above ingredients and mix well.
  • Now place the chicken pieces in the bowl and coat them well with the mixture.
  • Grease a baking tray and put the chicken pieces on it.
  • Pour over the marinade and bake for 45 minutes.
  • You can also use Crock pot instead of oven.
  • Your red chicken is ready to eat.

Ingredients:

  • 10oz crushed pineapple
  • 8oz frozen orange pineapple juice
  • 10oz of vanilla yoghurt
  • 10 paper drink cups
  • 10 wooden sticks

Method:

  • Blend pineapple, yoghurt and orange pineapple juice together till smooth.
  • Pour in the cups and freeze for 30 minutes.
  • Now insert the wooden sticks and refrigerate for 2 hours.
  • Unwrap them or peel off the glass cups to serve.
