Capsicum and Rocket Tortellini Salad

 

Winter Recipes for Dinner Tortellini salad

An easy pasta recipe for a perfect dinner salad.

Ingredients:

  • 300gms tortellini
  • 80gms baby rocket
  • 250gms bell pepper strips marinated with oil.
  • 1 lemon juice
  • 1 garlic clove crushed
  • 1/4 cup roasted peanuts
  • 2 tablespoon olive oil
  • Salt to taste

Method:

  • In a saucepan boil water and add 1 tablespoon salt.
  • Empty the pasta pack into this boiling water and add 1 teaspoon oil so that the pasta doesn’t stick after draining.
  • Let it cook for 10 minutes.
  • Drain the pasta and rinse with cold water twice.
  • Take a bowl and add pasta, baby rocket and bell peppers.
  • Pour the remaining oil, lemon juice and garlic. Toss well.
  • Season with peanuts and salt (if desired).

Cheesy Baked Potatoes

Cheesy Baked potatoes..Hmmm yummy. An awesome food full of calcium-rich ingredients like cream, cheese and broccoli. So just serve them hot and sit back to enjoy the flavors.

Ingredients:

  • 6 potatoes boiled and unpeeled

Filling:

  • 1/2 cup finely chopped broccoli
  • 1/3 cup chopped spring onions
  • 1/2 cup capsicum chopped
  • 1/2 cup sweet corn kernels
  • 2 garlic cloves finely chopped
  • 3 tablespoon sour cream/ butter
  • 1/2 cup mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 chopped green chilly
  • Salt and pepper to taste
  • 1 teaspoon mayonnaise
  • 1 teaspoon olive oil (extra virgin)
  • Fresh basil leaves for garnishing

Method:

  • Cut the boiled potatoes horizontally into two halves.
  • Scoop them so as to make a depression for the filling.
  • Sprinkle a very less amount of salt on the potatoes and keep them aside till we make the filling.
  • In a pan heat oil and add garlic, broccoli, corn kernels, capsicum and green chilly.
  • Now add the cheddar cheese and butter/sour cream.
  • Remove the mixture from flame and take it out in a bowl.
  • Now add salt and pepper and add mayonnaise.
  • Mix well.
  • You can add the potato which you had scooped out from the halves.
  • Arrange the potatoes on a greased baking tray.
  • Now fill up the potato halves with the filling with a slight mould.
  • Cover the filling with the grated mozzarella cheese.
  • Put the tray in a pre heated oven at 200°C and bake for 7 minutes.
  • Garnish with fresh basil leaves and serve hot.

Crisp Oven Fried Chicken

An incredible and simple alternative for fried chicken.

Ingredients:

  • 1 chicken cut into pieces or chicken legs
  • 1/4 tablespoon onion garlic powder
  • Bread crumbs
  • Oil spray
  • 3 eggs
  • Salt and pepper to taste
  • 1/2 cup all purpose flour

Method:

  • Clean the chicken pieces and pat dry on a towel.
  • Beat the eggs in a flat tray and add salt and pepper.
  • Dip the chicken pieces in the egg mixture.
  • Mix bread crumbs, flour and onion garlic powder and put the chicken pieces in this.
  • Coat the pieces well with the mixture.
  • Grease a baking tray and place the pieces on it.
  • Spray the pieces with oil so that they don’t get too dry after baking.
  • Put in the pre heated oven at 350°F for 45 minutes or until the chicken becomes crisp and light brown in color.
  • Your oven fried chicken is ready.

Fish Tagine with Tomatoes, Capers and Cinnamon

One of the most wonderful winter recipes for dinner.

Ingredients:

  • 6 pieces of halibut fillet
  • 1 cup of tahini sauce 
  • 1 teaspoon of ground cumin
  • 1 can of stewed tomatoes
  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon drained capers
  • 1/2 tablespoon cinnamon
  • 1 medium onion chopped
  • Salt and pepper to taste
  • 1 cup all purpose flour
  • Chopped parsley for garnishing

Method:

  • In a bowl take flour and add 1 teaspoon salt and pepper.
  • Coat the fish properly with the flour and shallow fry it in pan with 2 tablespoon of oil.
  • Keep the fish aside after frying it from both the sides.
  • In the same pan put cumin and heat it till you start smelling it’s amazing aroma.
  • Now add the tomatoes, capers, salt, pepper and cinnamon.
  • Let it simmer for about 7 minutes and then turn off the heat.
  • Add into it the tahini sauce.
  • Take a baking bowl and put one piece of fish and pour the tomato mixture onto it.
  • Now arrange another fish and pour the rest tomato mixture.
  • Pre heat the oven at 400°F and bake the fish for about 15 minutes.
  • While the fish gets bake sauté the onions in ½ tablespoon of oil.
  • Take out the fish from oven and garnish with the fried onion and chopped parsley.
  • This dish should be served hot.

Lemon Garlic Shrimps and Grits

Got late from the office now no need to worry prepare this dish on weekend and store in your freezer bake and eat when required.

Ingredients:

  • 1 cup instant grits
  • 1 cup parmesan cheese
  • 4 tablespoon butter
  • 1.4 pounds shrimp peeled and deveined, tails intact
  • 3 garlic cloves
  • 1 tablespoon lemon juice
  • 2 teaspoons red chili flakes
  • 2 teaspoons lemon rind
  • Salt and pepper to taste
  • Chopped parsley for garnishing

 

Method:

Grits:

  • Boil 3 cups of water (you can use chicken broth also) and add your instant grits and stir continuously.
  • Add salt, pepper, ½ cup parmesan cheese and 1 tablespoon butter.
  • Heat it on medium flame until it gets thickened.
  • Keep it aside and cover to be warm.

Garlic lemon shrimps:

  • In a blender add 2 garlic cloves, 2 tablespoons butter, lemon juice, red chili, 1 teaspoon lemon rind, salt and pepper and blend well.
  • Transfer this to a pan and bring it to boil.
  • Turn off the flame.
  • Heat oil and add lemon rind and 1 chopped garlic clove.
  • Now add in the shrimps and fry till they get pink.
  • Take the shrimps on a dish and pour the sauce (made above) over it.
  • Serve with grits.
